Ingredients

  • 510 g water, boiling, to soak
  • 255 g rice, brown, "low GI" (see Tip)
  • water, warm, to soak
  • 15 g extra virgin olive oil
  • 270 g leek, trimmed, white part only, cut into pieces
  • 2 garlic cloves
  • 100 g oyster mushroom, fresh, thinly sliced
  • 200 g fresh brown mushrooms, thinly sliced
  • 200 g water
  • 2 tsp vegetable stock paste, salt free (see Tip)
  • 3 sprigs thyme, fresh, leaves only, plus extra to garnish
  • black pepper, ground, to season, to taste
  • 1 teaspoon lemon juice, to serve
  • 60 g pecorino, grated
