Ingredients

Pickles

  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 8 ½ oz green cabbage, thinly sliced
  • 5 oz carrots (approx. 1), peeled and thinly grated
  • 1 long red chili, thinly sliced and deseeded, if preferred

Korean Beef

  • 10 oz aged grass fed sirloin steak, beef, trimmed and thinly sliced
  • 2 fresh red chilies, cut into halves and deseeded if preferred
  • 1 fresh lemongrass, cut into pieces (approx. 1½ in.)
  • 6 garlic cloves
  • 1 ½ in. fresh ginger, peeled, sliced
  • 1 oz water
  • 1 tbsp light soy sauce

Rice

  • 35 oz water
  • 7 oz brown rice, "low GI" (see Tip)
  • 1 oz rice bran oil
  • 12 baby romaine lettuce leaves, loose-leaf
  • sesame oil, to taste
  • soy sauce, light, to taste
  • 12 sprigs cilantro, leaves only
  • 2 long red chilies, thinly sliced and deseeded, if preferred
  • 3 oz bean sprout, fresh
  • 1 lime, cut into wedges, to serve
