Ingredients

  • 300 g flat rice noodles, Sen Lek style (see tip)
  • 60 g peanuts, unsalted
  • 3 medium eggs
  • 500 g water
  • 10 g fresh root ginger, peeled, sliced (2 mm)
  • 2 - 3 garlic cloves, to taste
  • 20 - 30 g fresh red chillies, to taste, cut in pieces
  • 30 g vegetable oil
  • 400 - 500 g large raw prawns, peeled, fresh or frozen, thawed
  • 50 g raw cane sugar
  • 30 g soy sauce
  • 50 g fish sauce
  • 10 g tomato purée
  • 1 Tbsp tamarind paste (optional)
  • ½ lime, juice only
  • 100 g fresh bean sprouts
  • fresh coriander leaves, for garnishing
  • 2 limes, quartered, for garnishing
