Ingredients

  • 150 g onions, cut into quarters
  • 1 tbsp salt
  • 1 pinch freshly ground pepper
  • 3 - 5 sprigs fresh mint, leaves only (optional)
  • 2 sprigs fresh basil, leaves only (optional)
  • 500 g lamb meat or beef meat, sinew free, cut into cubes (3 cm)

  • 2 - 3 ice cubes
  • 80 g fine bulgur wheat, soaked and well strained (see tip)
  • 2 level tsp Arabian spice mix
  • 2 - 3 fresh basil leaves, to garnish
  • 1 tbsp extra virgin olive oil
