Ingredients

  • 600 g plain flour
  • 410 g water
  • 55 g olive oil, plus 2 tbsp for oiling
  • 8 g dried instant yeast
    or 25 g fresh yeast, crumbled
  • 1 pinch caster sugar
  • 2 tsp fine sea salt
  • 40 g Parmesan cheese, cut in pieces (2 cm)
  • 1 - 2 garlic cloves, to taste
  • 240 g tinned chickpeas, drained (approx. 1 tin)
  • 15 g lemon juice
  • 20 g toasted sesame seeds
  • 40 g extra virgin olive oil
  • ½ tsp ground smoked paprika
  • 100 g broccoli, cut in small florets
  • 60 g carrot, cut in discs (2 mm)
  • 60 g red pepper, sliced in strips (5 mm x 4 cm)
  • 60 g tinned sweetcorn, drained
  • 100 g cherry tomatoes, yellow, sliced
  • 50 g aubergine, cut in crescents (2 mm)
  • 50 g courgette, cut in crescents (2 mm)
  • 60 g red onion, sliced
  • 3 - 4 pinches ground black pepper
