Ingredients

  • 2 long green chilies, trimmed and deseeded if preferred
  • 4 garlic cloves
  • 1 ½ in. fresh ginger, peeled and sliced
  • 20 oz pork tenderloin, trimmed and cut into 4 equal portions
  • ground black pepper, to taste
  • 1 tbsp barbeque Hoisin sauce or 1 tbsp homemade Hoisin Honey BBQ Sauce (see Tip)
  • 3 ½ oz red onions
  • ½ oz extra virgin olive oil
  • 7 oz white basmati rice
  • 35 oz water
  • 6 oz broccolini, thick stems halved horizontally (see Tip)
  • 5 ½ oz fresh green beans, trimmed
  • 10 ½ oz tomatoes, seeded and finely chopped
  • 3 tsp unsweetened shredded coconut, toasted
  • 1 ½ tbsp lime juice
  • 3 tbsp fresh cilantro, leaves only
  • 1 lime, cut into wedges
