Ingredients

  • 18 oz pork tenderloin, trimmed and cut into pieces (1 in.)
  • 1 ½ oz green curry paste, gluten free (see Tip)
  • 3 - 4 limes, divided
  • 2 fresh bird's eye chilies, trimmed and deseeded if preferred
  • 1 fresh kaffir lime leaf, stalk removed
  • 2 oz fresh cilantro, roots and stems only
  • ½ oz fish sauce, gluten free
  • ½ oz maple syrup
  • 35 oz water
  • 7 oz fresh green beans, trimmed
  • 4 ½ oz bean thread or cellophane noodles
  • 2 mangos, unripe, peeled, cheeks removed and julienned
  • 7 oz cherry tomatoes, cut into halves
  • 6 sprigs fresh Thai basil, leaves only
  • 2 tbsp unsalted peanuts, roasted and coarsely chopped, to serve
