Ingredients
- 200 g basmati rice
- 250 g boiling water
- 2 tsp Chicken stock paste (see Tip)
- 100 g frozen corn kernels
- 400 g canned chopped tomatoes
- 5 garlic cloves
- 1 ½ tbsp extra virgin olive oil
- 150 g brown onion, cut into quarters
- 200 g carrots, cut into pieces (3 cm)

- 2 - 4 tsp taco seasoning, to taste, gluten free if needed (see Tip)
- 1 tsp ground smoked paprika
- 8 chicken thigh fillets, boneless, skinless, cut into quarters
- 3 tsp chipotle chillies in adobo sauce
- 1 tbsp sweet paprika
- ¼ tsp sea salt
- ¼ tsp ground black pepper
- 400 g can black beans, drained and rinsed
- fresh coriander, leaves only, to garnish
- 4 tbsp sour cream, to serve
- 1 lime, cut into wedges, to serve
