Ingredients

  • 2 garlic cloves
  • 10 g truffle oil, plus extra to serve
  • 60 g fresh Swiss brown mushrooms, sliced
  • 30 g brandy
  • 200 g chicken broth bone,
    or 2 tsp Chicken stock paste, with 200 g water (see Tip)
  • 300 g pouring (whipping) cream
  • 200 g full cream milk
  • 25 g truffle creme
  • 5 g dashi powder
  • 2 cans cannellini beans, rinsed and drained
  • ½ tsp sea salt, to season
  • ¼ tsp ground white pepper, to season
  • 15 g fresh chives, finely sliced
  • bread of choice, to serve
