Ingredients

  • 2 chilli, green, long, trimmed and deseeded if preferred
  • 4 garlic cloves
  • 4 centimetre ginger, fresh, peeled and sliced
  • 570 g pork tenderloin, trimmed and cut into 4 equal portions
  • black pepper, ground, to taste
  • 1 tbsp barbecue sauce, hoisin or 1 tbsp homemade Hoisin Honey BBQ Sauce (see Tip)
  • 100 g red onion
  • 15 g extra virgin olive oil
  • 200 g rice, white, type basmati
  • 795 g water
  • 170 g broccolini, thick stems halved horizontally (see Tip)
  • 155 g green bean, fresh, trimmed
  • 300 g tomato, seeded and finely chopped
  • 3 tsp coconut, shredded, unsweetened, toasted
  • 1 ½ tbsp lime juice
  • 3 tbsp cilantro, fresh, leaves only
  • 1 lime, cut into wedges
