Ingredients

  • 70 g fresh baby spinach
  • 2 medium eggs
  • 10 g olive oil

Bolognese Ragout

  • 120 g streaky bacon, smoked, sliced (2 cm)
    or 120 g bacon lardons
  • 80 g celery, cut in pieces (2 cm)
  • 80 - 100 g carrots, cut in pieces (2 cm)
  • 150 - 180 g onions, quartered
  • 25 g olive oil
  • 25 g unsalted butter, diced
  • 200 g pork mince
  • 200 g beef mince
  • 70 g red wine
  • 250 g tinned chopped tomatoes
  • 70 g water
  • 1 dried bay leaf
  • 30 g tomato purée
  • 1 tsp fine sea salt
  • 00 flour, for dusting

Béchamel

  • 500 g milk
  • 40 g unsalted butter, diced
  • 50 g 00 flour
  • ½ tsp fine sea salt
  • 2 pinches ground black pepper
  • 2 pinches ground nutmeg (optional)
  • water, for boiling
  • 1 Tbsp olive oil, for boiling

Assembly

  • unsalted butter, for greasing and topping
