Ingredients

  • 2 ½ tbsp vegetable oil
  • 2 fresh green chillies, trimmed, cut into halves
  • 4 garlic cloves
  • 5 cm piece fresh ginger, peeled and cut into halves
  • 20 g sesame oil
  • 500 g chicken thigh fillets, cut into thirds
  • 30 g gochujaru (Korean chilli flakes)
  • 85 g Korean chilli paste (gochujang) (see Tips)
  • 15 g brown sugar
  • 20 g Japanese soy sauce
  • 5 g Chicken stock paste (see Tips)
  • 200 g water
  • ½ tsp ground black pepper
  • 350 - 375 g fresh garaetteok (Korean rice cake) (see Tips)
  • 250 g mozzarella cheese, cut into thin slices
  • 1 tsp toasted sesame seeds, to sprinkle
  • 2 spring onions/green onions, trimmed, thinly sliced, to garnish
