Ingredients

Meatballs

  • 30 g extra virgin olive oil
  • 4 small eschalots, cut in halves
  • 4 garlic cloves
  • 2 spring onions/green onions, cut into thirds
  • 500 g beef mince
  • ½ tsp sea salt
  • ¼ tsp ground white pepper
  • 3 tsp ground coriander
  • 1 tsp ground cumin
  • 2 tsp cornflour

Broth

  • 600 g beef brisket or chuck, trimmed and cut into pieces (3 cm)
  • 16 garlic cloves, bruised and peeled
  • 8 small eschalots
  • 3 tsp Beef stock paste
  • 2 tsp Chicken stock paste
  • 1200 g water
  • 240 g flat rice stick noodles
  • 2 bunches pak choy, cut into pieces
  • 2 spring onions/green onions, thinly sliced
  • 1 long red chilli, cut into slices
  • 1 - 2 tbsp fried shallots
  • rice wine vinegar, to serve
  • kecap manis, to serve
  • prawn crackers, to serve
