Ingredients

  • 500 g water
  • 400 g fresh skinless, boneless salmon fillets
  • 4 sprigs fresh dill, leaves only, plus extra to serve
  • 10 fresh chives, trimmed, cut into pieces, plus extra to serve
  • 2 spring onions/green onions, trimmed, cut into lengths (3 cm)
  • 250 g cream cheese, chilled, cut into pieces
  • 100 g crème fraîche
  • 1 lemon, zest only
  • 1 ½ tbsp lemon juice
  • ¼ tsp sea salt, to taste
  • ¼ tsp ground white pepper, to taste
  • 300 g smoked salmon, thinly sliced
  • 80 g pickled red onion, finely chopped and drained on paper towel
  • lemon slices, to serve
  • fresh chives, chopped, to serve
  • toast, to serve
