  • 20 g extra virgin olive oil, plus an extra 3 tbsp
  • 200 g brown onion, cut into quarters

  • 1 can canned chopped tomatoes (400 g can)
  • 2 tsp Beef stock paste (see Tips)
  • 50 g tomato paste
  • 3 sprigs fresh thyme, leaves only

  • plain flour, to dust
  • sea salt, to season
  • ground black pepper, to season
